A tremendous amount of work and love goes into this wine.  Late harvests can be a challenge and this one is no exception.  By the time we hand pick the grapes, they are firm raisins, almost like little marbles.  To extract all the lucious nectar from each berry, we have to macerate the grapes for several days. How do we macerate them?  Well, we do it the old fashion way.  Anne throws on her santitzed running shoes and runs over the grapes in macrobins for hours over several days prior to pressing.  We keep it nice and cool with dry ice.  After fermentation and filtration, the wine bottled and hand-dipped.  We are releasing it a little earlier than usual due to all of your requests!

Tasting Notes:Our efforts were rewarded by a wine that displays ample honeysuckle, peach and pear aromas. The texture is supple yet the acidity nicely balances the sweetness to give a clean lingering ripe pear finish. This wine will accompany lighter desserts and would be a great match to a sampling of crisp apples and pears, procuitto and matched with local aromatic cheeses.

Winemakers Notes:After four days of foot stomping (Anne’s very own) and cold soaking the Late Harvest Viognier was whole cluster pressed and 100% cold fermented in stainless steel. Because of the high harvest sugar we utilized a specialty yeast, known as Steinberg. By avoiding malo-lactic fermentation we further enhanced the fruit profile of the wine. The wine was filtered prior to bottling and finished with a hand wax dipped seal.
